{an apple pie/caramel cheesecake hybrid}



I hate the fact that I feel the need to preface this post with a disclaimer: I am not a food blogger. I am not a photographer. I am not good at anything, and I'm on my knees in the dirt asking you to not judge me. 

It used to be that people could blog about whatever they wanted, like, "Look what I did/made/took a picture of/listened to/watched/thought of/wrote..." and it was cool. (Not cool cool. Cool in the sense that you didn't tell a single soul in real life that you had a blog because it was literally the nerdiest ((not in a good way)) thing you could possibly do.) Now you have to have a "niche" and buy a "domain" and write for an "audience" and go to a "conference" to learn about "monetizing" and buy an expensive "camera" and despite all your best efforts you'll probably still end up on "GOMI".

Welp.

I'm about to blog about food. Using pictures that I took with my broken point and shoot. And this post is not sponsored by anyone other than my husband, who bought the apples.

For Thanksgiving this year, I was on dessert duty. I picked it. Dessert duty, I mean. When given the choice, I always pick dessert duty, because then I can make a cheesecake. When else am I going to make a cheesecake? And I decided to go all out. Because when you make, like, one cheesecake a century, you have to go all out when you do.

By "go all out" though, I don't mean money-wise or effort-wise. I only really mean taste-wise and appearance-wise.

So I decided what I wanted to make (an apple pie/caramel cheesecake hybrid, because I felt a little guilty for not making a traditional apple pie) and did what I always do: I hit up Pinterest. I needed a gluten-free crust, so I searched "easy delicious fast good gluten-free cheesecake crust" and I found THIS crust which uses pecans instead of graham crackers (and really was easy, delicious, fast, and good). Then I searched "best easiest caramel cheesecake ever" and found THIS which I only had to modify slightly for the filling. And last but not least I searched, "really cool apple pie" and found THIS, which looks awesome but is probably the easiest thing ever. (I didn't follow the recipe, just made kind of a quick apple pie filling with crazy amounts of butter and sugar and used the picture for the design.)

There you have it: I am lazy, but resourceful.

But the point is not that.

The point is that I made this, and it was good:

Love the apple design on the top - very oh la! And boo, I think the landscape of blogging totally has changed. It's kind of sad how much judgement and expectation there is now. Like, get off my little patch of internet with your entitlement and expectations so I can just keep doing what I'm doing?

AND YES. i miss blogging as it was. that's a very cliche thing to say at the moment but dang it, it's cliche because it's so true.

Whadda ya mean you're not a photographer! Just b/c you don't have a fancy camera, have taken classes, and get paid for it does not mean you're not a photographer. You take amazing pics and have such a cool eye and perspective for life in general. Just like I believe I'm a teacher, even though I have no university degree to prove it!

Psh you're good at a lot of things. Writing being one of them, and apparently cooking too because YUM.

There are gluten-free graham crackers for future reference. They're called S'Moreables. I've also used mi-del ginger snaps and melted butter for crusts (http://www.midelcookies.com/products/gluten-free/ginger-snaps). I'm sure yours was delicious buuut in case you want to try something new!

Hahaha, well, I mean. I like taking pictures and I feel like I have an okay eye...but I still haven't figured out all the settings on my little training wheels camera. I don't know enough or have the right equipment to produce really quality pictures. I feel like we live in an age where everyone thinks they're a photographer because digital SLR cameras are so accessible and can produce beautiful images with so little effort or knowledge. That market is so crowded with really subpar work. I don't even want to go near it.

I'm almost even scared to call photography my hobby, because I feel like I'm not invested enough in the art and science of it...

TL;DR: I'm not a photographer, but I do love taking pictures. ;)

HOWEVER. I'd totally agree with you that you're a teacher. You've done it as a job and you've done it well!

Huh! I wonder if we have those in Canada! My grocery store has nothing in the way of gluten-free crackers. Sad. But have you tried the pecan crust? IT'S SO DANG GOOD.

And thanks for the compliments. I wasn't fishing, (more just putting out the disclaimer because I've been seeing an increasing amount of trolls wandering around the internet yelling at people to stop doing things they're not pro at, which is lame) but it's always nice to catch some. :)
